Basic Dessert Crepe Recipe

This is possibly one of my favorite desserts! Now that strawberries are in season, I think I'll be having these more often! We had these for our dessert at our Easter get-together and they went over pretty well! You won't regret making these! Be careful though...it's hard to have just one!

Basic Dessert Crepes

Batter:
4 eggs
1 C flour
1/2 C milk
1/2 C water
1/2 tsp salt
2 T melted butter
2 tsp sugar
1 tsp vanilla
Mix well in blender. Pour about 1/3 cup batter into a 9" skillet and swirl around the pan until even. Cook til the edges start to pull away from the pan; flip. Cook 2nd side til golden. Don't worry...the first one doesn't usually turn out! Makes about 12 crepes.

Filling:
1 large package vanilla instant pudding
3 C half and half
1 tsp almond extract
Mix; fill crepes with filling. Top with fresh berries, chocolate, whipped cream, etc.

Is that your mom's recipe? I remember when she used to make them for us and bring them after baton practice and they were always soooooo good! I think I will make them this weekend......the boys would love that! Thanks for the recipe :)

We grew up eating crepes with strawberries, powdered sugar, and a dash of lemon juice. Yum.
